Makes: 4 Glasses (we have repurposed CIRCA candle glass vessels)
2 cups of frozen diced mango
Juice of 1 lime
1 ½ cups of peeled and diced papaya, chilled
150ml Aperol/Non-alcoholic Citrus flavoured sparkling drink
4 cups of ice cubes
Crushed ice, to serve
300ml Prosecco, chilled/Sparkling Apple juice

Step 1: Put frozen mango, lime juice and a splash of water into the jug of a high-speed blender and blitz until smooth and sorbet-like.
Step 2: Spoon into recycled CIRCA candle glasses or serving glasses, using a spoon to swirl the mixture up one side of the glass, then place in the freezer. Freeze for at least 2 hours or overnight.
Step 3: Put papaya and Aperol into the jug of a high-speed blender and blitz until smooth. Add ice in batches, blitzing until slushie consistency.
Step 4: Spoon the papaya slushie mixture into glasses. Top with a little crushed ice, then top up glasses with Prosecco.
Step 5: Garnish with mint leaves, lime and mango.
Serve immediately and enjoy by the pool.
