Before the gifts are given, before the celebrations begin, there’s a quiet moment worth savouring. This Mother's Day, Amanda Cordony shares her absolute favourite Omelette recipe. So simple, even little ones can whip it up just in time for Mother’s Day.

 Gather your little helpers, set the table with fresh blooms, light a CIRCA candle, and start the day with something special.

Amanda’s Favourite Omelette

Cook time: 20 minutes | Prep time: 5 minutes | Serves: 2

Ingredients:

40ml extra virgin olive oil, plus extra to serve

1 brown onion, thinly sliced into wedges

 1 garlic clove

minced 4 eggs, well whisked

 30g salted butter

 Sea salt and freshly cracked pepper

Method:

Preheat oven to 180ºC (fan-forced). In a non-stick pan over low–medium heat, sauté onion in olive oil for 5 minutes until translucent.

 Add garlic and butter, cook for 2 minutes. Pour in whisked eggs, distributing onions evenly. 

Gently pull the eggs from the edges toward the centre with a spatula. Let simmer for 2 minutes.

 Transfer to the oven and bake on the top shelf for 5minutes, until eggs are just set.

 Drizzle with olive oil, season with sea salt and cracked pepper, and serve warm.
