Valentine’s Day doesn’t have to be complicated to be special. For Amanda Cordony, the most meaningful moments happen around the table - without pressure, without perfection and without spending the entire evening cooking.
This one-pan recipe is her answer to effortless entertaining: comforting, generous and designed to be shared.
Nothing beats an easy dinner, a glass of red to set the mood for unwinding and catching up around the table.
One-Pan Mozzarella Tortilla Bake
Prep: 20 minutes
Cook: 25 minutes
Serves: 4 - 6
Ingredients:
3 tablespoons Olive Oil, extra to serve
1 Onion, dice
800 g Lean Beef Mince
2 Carrots, peeled, dice
3 stalks Celery, dice
1 long Red Pepper, dice
2 Truss Tomatoes, grated, skin discarded
3 Garlic, mince
1 teaspoon Paprika
1 teaspoon Cumin
12 Flour Tortillas, 13 cm
3 Shallots, finely sliced
250 g shredded Mozzarella
Sour Cream to serve
Basil leaves to serve
Salt and Pepper to taste
Method:
1. Preheat the oven to 200ºC. In a large 30 cm ovenproof pan add 1 tablespoon of Oil and Beef Mince. Brown on medium to high heat for 6-8 minutes. Remove mince from the pan.
2. Turn heat down the low - medium and add 1 tablespoon Oil, Onion, Carrots, Celery, Pepper, Garlic, Salt and Pepper. Add ¼ cup of water to dry and soften vegetables for 5 minutes with the lid on, stirring throughout. Stir through grated Tomato and spices.
3. Turn off the heat and add the Beef Mince with resting juices. Stir through the combine and remove mixture from pan. Add remaining olive oil into the pan and set aside.
4. Lay out Tortilla’s and generously pile up Beef mixture into the centre of each tortilla. Lift each Tortilla from both sides and place in a circular pattern back into the pan. Repeat until the pan is full and sprinkle over Shallots and Mozzarella.
5.Bake for 10-15 minutes until golden and serve with Basil leaves, Sour Cream generously dolloped on top (extra to serve) and Olive Oil.
This Valentine’s Day, it’s not about doing more - it’s about enjoying more.
