This Mother's Day, Amanda Cordony shares her absolute favourite - Oven Omelette recipe.

A twist on a classic Omelette, so simple even little ones can whip it up just in time for Mother’s Day - (just be sure to supervise around the stove top and oven steps).

Gather your little helpers, set the table with fresh blooms, light a CIRCA candle, and start the day with something special.

Ingredients:

40ml extra virgin olive oil, plus extra to serve

1 brown onion, thinly sliced into wedges

1 garlic clove,

minced 4 eggs, well whisked

30g salted butter

Sea salt and freshly cracked pepper

Method:

Preheat oven to 180ºC (fan-forced). In a non-stick pan over low–medium heat, sauté onion in olive oil for 5 minutes until translucent.

Add garlic and butter, cook for 2 minutes. Pour in whisked eggs, distributing onions evenly.

Gently pull the eggs from the edges toward the centre with a spatula. Let simmer for 2 minutes.

Transfer to the oven and bake on the top shelf for 5 minutes, until eggs are just set.

Drizzle with olive oil, season with sea salt and cracked pepper, and serve warm.
