Recipe - Smoked Salmon Waffles with Caper and Dill Cream Cheese

Prep time: 10 minutes Cook time: N/A Makes: 8

Ingredients

4 small store-bought Waffles

2 slices Smoked Salmon, cut into 1cm strips

1 tablespoon Capers

1 tablespoon fresh Dill

⅓ cup Cream Cheese, room temperature. (Take out of the fridge 1 hour before using) 

1 Lemon, zest

12 edible flowers, such as Rosemary flowers

1 tablespoon Thyme leaves

Method

1. Cut each waffle into 8 rectangles (2 squares each) to create finger sized pieces. Set aside.

2. Finely chop Capers and Dill and mix into the Cream Cheese. 

3. Place mixture into a piping bag or carefully spoon into one square of each Waffle finger.

4. Roll Smoked Salmon strip and place into the second square of each Waffle.

Use a microplane to zest Lemon rind on top of each Waffle finger, add edible flowers and Thyme.

Serve.
